I was feeling a little bit homesick after a friend promised me torrijas but then forgot to bring them along. So I made my own.

Ingredients
- Loaf of bread (± 400 grams), ends cut & sliced in 2 cm slices
- 600 ml milk
- 1 stick cinnamon
- 60 gr sugar
- 2-3 eggs
- Sunflower oil
- Cinnamon sugar (30 gr sugar + 1-2 tsp ground cinnamon, to taste)
Instructions
- Add milk, sugar & cinnamon stick to a saucepan, and heat over medium heat until just starts to simmer. Remove from heat and let cool slightly. (Optional: transfer to a shallow dish)
- In a shallow dish, whisk eggs until frothy.
- Heat 1 tsp of oil in a non-stick pan, over medium heat.
- Soak bread lightly in the milk, transfer to egg and coat, then fry on both sides until golden.
- Remove torrija from pan to a dish, and sprinkle with 1 1/2 tsp cinnamon sugar.
- Repeat until bread / milk / egg are used up.
