Adapted from Vegan Lemon Bars.
Ingredients
Crust
- 180 gr flour
- 50 gr (cane) sugar
- 75 gr coconut oil
- pinch salt
Lime curd
- 400 ml coconut milk
- 6 limes
- juice of 6 limes = 180 ml
- zest of 3 limes
- 150 gr (cane) sugar
- 16 gr corn starch
- 2 gr agar agar
- 1 tsp vanilla extract
- pinch turmeric
Instructions
- Make crust
- Preheat oven to 180C, line 20×20 cm tin with baking paper.
- In food processor, add all crust ingredients and pulse until sandy. It should come together when pressed between fingers
- Press crust into lined tin. Bake in preheated oven for 18-20 min. Take out & allow to cool slightly while making curd
- Make lime curd
- Add all ingrediends except vanilla to a sauce pan. Whisk well to mix.
- Heat over medium-high heat, whisking, & bring to the boil, lower heat and cook, whisking, until thickened, about 5 minutes.
- Remove from heat, add vanilla & mix through.
- Assemble
- Pour curd over crust
- Allow to cool for to room temperature (about 2-3 hours)
- Place in fridge and cool until completely set.
- Cut in squares / bars & serve.
