Coconut Lime Bars

Adapted from Vegan Lemon Bars.

Vegan Coconut Lime Bar

Ingredients

Crust

  • 180 gr flour
  • 50 gr (cane) sugar
  • 75 gr coconut oil
  • pinch salt

Lime curd

  • 400 ml coconut milk
  • 6 limes
    • juice of 6 limes = 180 ml
    • zest of 3 limes
  • 150 gr (cane) sugar
  • 16 gr corn starch
  • 2 gr agar agar
  • 1 tsp vanilla extract
  • pinch turmeric

Instructions

  1. Make crust
    1. Preheat oven to 180C, line 20×20 cm tin with baking paper.
    2. In food processor, add all crust ingredients and pulse until sandy. It should come together when pressed between fingers
    3. Press crust into lined tin. Bake in preheated oven for 18-20 min. Take out & allow to cool slightly while making curd
  2. Make lime curd
    1. Add all ingrediends except vanilla to a sauce pan. Whisk well to mix.
    2. Heat over medium-high heat, whisking, & bring to the boil, lower heat and cook, whisking, until thickened, about 5 minutes.
    3. Remove from heat, add vanilla & mix through.
  3. Assemble
    1. Pour curd over crust
    2. Allow to cool for to room temperature (about 2-3 hours)
    3. Place in fridge and cool until completely set.
  4. Cut in squares / bars & serve.
